For one thing, replicators and the holodeck are not unlimited. They do use up a fair bit of energy. The holodeck on the Enterprise-D wasn't even used by civilians for personal use. They spent more time on the unseen recreation decks.

My guess is most people are indoctrinated to the whole "self-improvement" thing as well as not being materialists or consumers.
