The problem with speculating and bitching about the wights is that we know nothing about them. The Night King touched Viserion to raise him, but the wight who attacked Jon and Jeor in season 2 woke on it's own.
We have no idea how they do it, and neither do the characters in the show. All they know is that wights are weak to fire, and that if a corpse is burned it never is turned.
Everything else is fan theory or speculation.

Obviously, the Night King has foresight, and is a strong greenseer rivaling Bran.

The army could easily and obviously kill Jon and crew with no problem. The director made that clear with how the walkers were perched on that hill. The Night King needs a dragon to break the wall(season finale ending) so he used Jon amd crew as bait.

He also knew that Viserion would be his dragon. That's why he killed him. The spear thrown at Drogon was rushed and sloppily aimed, this because hw knew it wouldn't land anyways.

Research "Boundary Layer Theory".

Essentially the fluid (in this case air) immediately adjacent to a solid surface moves at the speed of that surface (the "no slip" condition) and as you move towards the bulk of the fluid away from said surface, the velocity increases to match that of the bulk fluid.
