This is something I don't understand. Why do people protect criminals?

I can understand why the justice system is the way it is set up, because it isn't always easy to prove that somebody committed a crime. Even when you can "prove" it it's often on shaky evidence. However, if we have concrete proof of somebody committing a crime, eg when they're caught red-handed, then why is it important to protect them?
