In the UK version, they'd find him an interesting challenge where someone who was trying, but failing for whatever reason, could be coached into success. The show was an insightful look into the world of small restaurants and the audience would learn about food and preparation as well.

The US show is about finding irredeemable pieces of shit who try to poison Gordon, have no interest in fixing their mistakes, scream and run off when confronted, and then give crocodile tears when the show turns into Kitchen Makeover and Santa Ramsey drops a new restaurant onto their laps. Nobody learns anything, lest of all the failures that brought him there to begin with. Heavily edited to increase drama, with an obnoxious overuse of the rusty gate sound effect.
