Because a lot of the time the actual sound something makes (like a punch to the face) doesn't sound like we're conditioned to think it should sound. If it didn't sound that way it would feel unnatural.

Plus, sometimes it's difficult to capture audio cleanly during action scenes as there's lots of moving going on. Also, if they recorded everything, it might run over the important dialogue, which is the most crucial part.
