It goes against GRRM's style of storytelling to have Dany survive.
All said and done if Dany succeeds then ASOIAF is just her story. Nothing that happens in Westeros really matters (except Tyrion's story arc) because it's just a story about how Dany traveled Essos, built up an army, and reclaimed her throne.
Everything else is superfluous. It doesn't matter who's sitting on the iron throne, who's armies she burns to ash, etc.

She's going to die because she's destined to fail. Her story arc is one of somebody who was born with everything, lost it in infancy, scratched and clawed her way to the top in foreign lands, and then failed.

This isn't Wheel of Time, Harry Potter, or Lord of the Rings.
