If you read his chapters you actually understand his character and learn to respect him.
His biggest desire was to gain respect from people who he admired: Dayne, Eddard Stark and such.
He admired their honorability and their bravery and wanted to be like them so much that his heart was broken when they treated him like shit just because his name, assuming he was spoilerd and blaming him about his father's schemes.
So he acted passive-aggressive with them.
Stabbing the Mad King and lose his honour just to save his father and all the people in KL was very hurtful for him, but he sacrifices his honour for the sake of all those people, he was kinda heroic like Ned's choice to break hgis vows to Robert and hide the last Targaryen, or refuses to kill Daenerys.
Then the whole Brienne changed him more, he did lose his hand and definitely made him the person he always wanted to be, with the exception of his love for Cersei.

I'm pretty sure a dragon flying as much as hundreds of metres above the ground with high quality plate armour (not impossible for a literal king to get) and moving at great speed wouldn't really have to worry about a stray crossbow bolt, if you could even hit the dragon without getting BTFO by it's flames then it would have lost alot of power and even if it got through plate armour, it then has to deal with hard scales and any flesh pierced would be next to nothing.

The only way to do any real damage would be to get and eye shot, hope there's a gap in the armour/scales, or get it in the dragons internal organs by shooting it in the mouth. Basically, the chances of actually hitting the dragon and then doing damage on top of that is pretty slim. Most plate armour hit by crossbows is at a fairly short range, so it's a false equivalency.

They still obey her and follow her around though. In the book lore the Targaryens would sometimes run into trouble because they had more dragons than riders, so the other dragons were next to useless. They had to run around finding people with some Targ blood to ride them.

If I was Dany I would have done everything possible to find somebody with Targ blood to ride one of the other dragons, seems like a waste to leave the other two just flying around. Or hell, have a kid first, then wait about 15 or 16 years to launch my invasion for extra insurance.
