Bronn has some plot armor but I think you're just supposed to buy that he's a really talented fighter up there with Jaime (with two hands), Barristan Selmy, etc. It makes sense - the only thing separating him from a highborn fighter is a master-at-arms, and someone can get a lot of experience without formal training. Bronn's just the only one who's really been given a chance. Any other really talented lowborn fighters just stay that way - nameless people really good at fighting until they die one day

In the books, it shows that the Dothraki are basically post-apocalyptic hordes that were formed when the Doom of Valyria came along.

When the Valyrians conquered everybody in Essos, destroyed all the armies, and replaced all military developments with dragons, nobody needed regular armies.

This all happened at the same time that what used to be the Freehold fractured into city-states. The westernmost Free Cities got around this by importing their elite forces from Westeros, and being relatively less dependent on Valyria. In the 400 or so years since the Doom, they're the only ones who have really recovered, probably because they're the closest to Westeros, which has had a relatively normal course of progression. There are more than a few indications that GRRM knows how bad the Dothraki are, and is in fact not an idiot:

He isn't that obnoxious and he pretty much disappears once Tyrion leaves Westeros. When Jaime needs someone for training, he gets Ser Ilyn Payne for the job instead of le witty mercenary. Meanwhile, we hear through Cersei that Bronn's wife had a son (Not his, she was raped long before they married by a mob in King's Landing and she got a rape baby) and he named the bastard Tyrion. Cersei, being the fucking nutcase she is, tries to kill him because she hates Tyrion so why not but the plan backfires. His wife's mother dies, he kicks out his sister-in-law and his wife becomes lady of the house, and he becomes the lord through marriage.
