I think your problem is assuming that the character Rick's views, are that of the creator, and those that the creator wishes to impart onto its viewers. The creators have Rick correct Summer, not to show the viewers a sign of intelligence, but rather, inform the audience a little about Rick's character in a way that is both humorous and brief. The simple fact that you did not catch on this, makes me think that maybe YOU are a little threatened from YOUR lack of intelligence and possible low TV-IQ (a term albeit I invented just now, but you should catch on to what I mean, or can you?)
