I am not quite sure. On one hand, Shrek or Farquaard never signed a contract with donkey that he would get half of the land in the first place. Also, donkey was never officially employed by Shrek to help him.
On the other hand, donkey doubtlessly expended resources and time to help Shrek fulfill his task so compensation should be in order.
