He was a sadist and he was incapable of compromise. He was definitely going to make a horrible mess of things if he stayed king and had a sizable reign.

Joffrey is one of those characters you hate, but who you nevertheless get hyped for everytime they show up on-screen. They´re the kind of guys who are uncontrollable, but not just by being maximum edge. Sometimes they do go full edge. But sometimes they´re brooding, or they do nothing, or they hold in check by someone else, or they decide to corrupt another character. They keep you on invested.

Compare that to Ramsay who was just all the edge, all the time. Ramsay was probably just as violent as Joffrey, but the fact that he always did the most horrifying things possible took the tension out of his scenes. Him interacting with Roose were the most interesting scenes, and even then he ultimately just stabbed him and that´s that.
