If the bullets just bounced off, all of those scenes would have been boring as hell. Also she's never dealt with guns before so she has no idea whether or not they'll hurt her. They killed that other amazonian woman so she might have thought they'd kill her too.

in the comics wonder woman can be pierced by bullets and swords but is generally impervious to blunt force damage. she also has a healing factor i think so getting shot wouldn't be fatal, would probably just slow her down unless it was some super special anti-wonder woman bullet

It's blatantly shown in the movie that she gets a power creep when she goes super saiyan after Kirk dies. She was vulnerable to bullets before that, and is invulnerable to them afterwards.
