Like the scene where a perfectly honorable German refuses to give up information, and the Jewish-American interrogating him responds by savagely beating him to death with a baseball bat while his friends cheer and he makes baseball jokes. Also, the previously epic/exciting music that had played to that point ends the second the guy starts swinging the bat.

I think that's your subjective interpretation. You were able to see that because you were keeping that kind of open mind about it, but Tarantino's movies are full of inconsequential and nihilistic deaths that accomplish nothing or have no deeper philosophical meaning. Think back to Marvin's death in Pulp Fiction. He gets killed by accident and that's the end of it. His death is not mourned by the characters and the movie doesn't expect the audience to do so either. It's a plot device designed to hand a conflict to the protagonists (dead body, messy car).

Similarly Basterds has the same. The bar scene with Fassbender humanizes the characters around him, but in the drop of a hat executes them all with no room to breathe, contemplate, or reflect on it all, even with the story of the new father in the mix.
