I think people want BrBa to be some kind of hyper-realistic gritty could-actually-happen kind of chronicle.

There's a decapitated-head-on-turtle bomb, the plot is full of unlikely coincidences and convenient deus-ex-machina character decisions, Walt survives a point-blank detonation of a magical meth-crystal hand grenade he made himself with SCIENCE!

People get lulled into a sense of reality because the show has some really mundane parts and focuses on the "realistic" consequences of some of the character's actions. But BrBa takes a lot of cinematic and narrative liberties, almost to the point of being magical reality.

Gus' death isn't over the top given the show's context, but it is way out on the edge of the show's bell curve.

Yeah this, I never had a problem with that scene because Breaking Bad and by extension Better Call Saul don't exist in our world, they exist in Movie Land, which is a lot more fun of a place and allows for cooler shit to happen. It is hyper realistic in that the characters are done very well and are some of the most convincing characters I've ever seen but that fact just makes things like Hank's parking lot shoot out and, yes, Walt's killing of Gus all the more powerful and interesting. I like that they take creative liberties.

I always had this "head cannon" as stupid as that is to say, that the Leone films somehow took place in the same universe as Pulp Fiction and Resevoir Dogs and I like to think Breaking Bad exists there too. It's a slightly magical world with slightly different rules and plausibility.

Gus' death was a nice symbolic farewell and a great way to end a season. It was supposed to give you a "no fucking way" moment.

They spaced the silliness better before S5
The fulminated mercury is the only standout silly thing in S1, the turtle head bomb isn't that silly by cartel standards and the plane crash was contrived as fuck but not actually impossible.
S3 and 4 were where it started to get really silly with Gus who was pretty much a Bond villain. I have trouble putting it into words properly but the writers managed to sneak most of the silliness in. Keeping Gus' past vague and having lots of scenes of Walt and Jesse doing normal-ish stuff definitely helped. As much as people bitch about Skylar and Marie I think they served a valuable purpose; keeping viewers from noticing that they were watching Meth Note. I think another thing that helped was having Saul as a wacky character, having one character who was deliberately silly helped take the heat off the rest of the story.
I honestly don't think people would get so hung up on Gus' death if S5 didn't get ridiculously silly very quickly, you've got the magnet, the train robbery and the nazis all in the first half. To top it off S5 was when it became completely clear that Walt was an unironic badass now. This change actually happened all the way back in S3 when he killed those two drug dealers but they did a good job of hiding it, In S4 Skyler went behind his back to give Ted money, Mike treated him like a joke and Walt couldn't go an episode without telling someone how much he was scarred of Gus. In S5 even Mike slightly afraid of Walt and you've got the Say My Name scene.

The show already got too cartoony when le silent spic twins showed up so I went along with it.

This show had so much fucking potential, man. What a shame.
