The ring expands or contracts to fit whoever wants to wear it, speedwatcher.

Sauron's eye definitely would've seen the eagles fly in, resulting in sending a ton of his fellbeasts as well as his Nazgul.
Not to mention archers, projectile launchers and trolls throwing rocks.

The eagles would've also have to consult with themselves, where they more than likely would disagree to carelessly carry the ring into Mordor instead of sneaking it in on the ground.
