Because, all /r9k/ memes aside, this is not a tenable way for human beings to live, especially when you are obliged to be self-reliant (to the point of utilizing your given supply stockpile) in order to stay alive. You can't order JimmyJohn's to your door and there's no internet. So you're going to walk aroud the facility.
This already wasn't a viable option when Copper made his dumb suggestion; most everyone had already gotten a good look at Benning's arm, heard the scream, started getting the picture. Everyone saw that corpse they brought back and knew something was fucked.
Part of how a quarantine works is that the contagion is at least isolated or better yet killed somehow. Just holing up in this case accomplishes neither and leaves the thing alive until such time as it can escape to a populated area and declare game over. Mac understood this quickly, and others probably realized much the same even if they didn't verbalize it as he did.
