Because it was a nicer story. Because she saw Kevin, the married couple and the nun lying and how happy they were. Because for the entire series she's been obsessed with finding the truth and destroying people who lie but she's now realized that the only way to get over her kids is to lie. Because she can finally pretend that her kids are alright and let them be.
It's likely that a "parallel universe" does exist but she never saw it.

Kevin and Laurie are the only other characters we see in the finale. Kevin can access the world of the dead and Laurie's fate was ambiguous in the second last episode. So Nora may have just died and thought she crossed over to that world. Kevin could have been taking "vacations" every year to go to the other side and try to track down Nora.
