The movies are called 'Star Wars' for a reason. The point is that the stars themselves are sentient. They're psychic influence on living things all through the galaxy is what people experience as 'the force'. For the Jedi, which are shown as the good guys in most material, they try to obey and sustain the force. This means, practically, acting as peacekeepers and guides, and helping life itself thrive and grow across the galaxy. They're doing what they think is good for life, but it actually just acting in the interest of the stars trying to spread life all around so they have a wider and wider influence.

The bad guys in the setting are Sith. They are also influenced by the force, but in the other direction. They try to kill and make trouble. And some of them are specifically inspired to bring sentient creatures together into an aggressive empire. This happens over and over, through history, only to be broken up by Jedi. But each time, Sith guide people into an empire and build bigger and bigger superweapons. They probably don't even entirely understand what or why they're doing it. But they make a 'death star' that destroy planets, and are broken apart. Then they make a 'starkiller', that literally destroys stars. This is the actual beginning of the 'star wars'. It's when the people in the galaxy start to actually fight back against the stars influence by literally destroying them.

They did it in the 90s.

According to the book Alien Exodus humans were enslaved by an artificial intelligence that runs its own society which is apparently the one from THX-1138. The free humans (which are Paxton Solo and a relative of a guy from American Graffiti) build a colony ship to fly from earth to Alpha Centauri. On the way there they flew into a wormhole. After going through the wormhole they let some scout ships free from the colony ship but they realized too late that the wormhole closes again and because they didn't want Paxton Solo and his Century Eagle stranded alone in this unknown galaxy they stayed there. They landed on a planet but were enslaved by Gamorreans and Rodians. The first human killed was called Corelli and the humans agreed that they will call this planet Corellia to honor their fallen comrade.

The slavers work for a species calles Varlians. They use humans, Mon Calamari, Bith and other aliens to build giant temples. To cut the story short. Some guy gets telecinetic powers and is thus called Skywalker. The temples are built so the slaves are occupied while a crystal sucks up their force energy. The Varlians are being infected by a virus that stunts their growth. They grow out of larvas but with the disease they stay larves and keep selfish personalities forever, they became Hutts. With the crystal broken the species go back to their home planets and Corellia becomes the first human colonized planet.

It was never canon but it might as well be as references to Hutts having been completely different at some earlier time and references that line up with this story in the history of planets exist in source books. Though a species that enslaved most other species exists in the old canon as the Rakata in the Tales of the Jedi comics.

The story was eventually reworked into a Lucas-published book set in an OC universe.
