It does a decent job of maintaining interest by introducing a lot of twists and developments by the end of an episode, but I'd hesitate to call it good. There's only the bare minimum of characterization for a handful of characters out of the 15-20 they introduce, and even they don't really develop much beyond typical anime shit like "I was scared before... but know I know I have to fight... to protect the people I care about!". I already knew the twist from having read the manga but that reveal, the way it was handled, blew my mind. Anime has a lot of difficulty overcoming the rigid constructs that define it due to japans shitty bureaucratic 'always defer to your elders no matter what even if they are fucking retarded braindead gooks hellbent on destroying everything you love' culture, otaku fags, weebs, etc. forcing a convention of "the only flavor we like is vanilla so keep feeding us vanilla and don't you dare try to slip some chocolate chips in or we will literally fucking riot".

I saw only few animes, but for me they almost always make the same amateur mistake : they take a great idea, and build everything on it. You can see it in amateur writing a lot, people are trying to come up with the most original or shocking things, but it's pointless without good story or characters.
Attack on Titan has great ideas and concepts, but characters are garbage and story seems uninteresting.

Titans are just mutated humans. There's this giant mainland, away from the tiny island that the story takes place on and, they have some spinal fluid liquid that they inject into people to turn them into titans.

There was some original titan woman who somehow ended up dying after 13 years of somehow getting her titan powers and after she died she split her soul into nine fragments and those fragments became shifters.

Shifters only live for 13 years after getting their powers then they just die (because of the original titan only living 13 years). Each shifter is unique and has its own special ability that none of the others have. When they die, they either pass on their powers directly via getting eaten or their powers just teleport into someone else "worthy" (basically magic). It was basically revealed that titan shifting is magic and that magic exists in their univese. There's this thing called the "coordinate" that is basically allowing for all this magic to happen or something. It's why Titan bodies come out of thin air when a shifter ends up shifting.

Also about the mainland, it's more or less modern. Steampunk modern, really. Far more advanced than the tiny island that Eren and all his friends are on. They have electricity, blimps, and photo cameras.

The tiny island is basically a prison island that people get sent to from the mainland. That's why outside of the walls there are so many titans.

There was a royal family or a former empire on the mainland who took something from the ruling empire and ran off to the tiny island with it and walled themselves in their city. The island royalty pass on some kind of magic insight to their offspring and whenever the person gets this they lose all hope of ever leaving the island when they initially hope for it passionately.

The mom-eater was Eren's Dad's first wife.

Eren's titan is called the Attack Titan (Attack on Titan)

Most anime is founded almost exclusively on a neat premise, and the narrative that's actually placed on top of the premise feels like a slapdash combination of a bunch of stale character archetypes, plot threads and messages that are already extremely prevalent in other anime. It's a very incestous industry, as a lot of the people doing the grunt work and coming up with stories are people who have mostly only seen other anime, so they apparently only feel comfortable doing what other stories have already done, only with a slight twist.
It'd be like if Alien was a story where a group of teenagers on vacation at a summer camp find the face hugger egg, and then the resulting xenomorph runs around and kills everyone until it's tracked down by a local sheriff, a marine biologist and an experienced fisherman, who manage to lure it into an industrial press at a car factory, and when the sheriff kills it he says "You're terminated, fucker"
