It's very obviously a throwback to John Hurt's death in the first alien.
Why Scott felt it was appropriate, I don't know.

Danny McBride was just there to represent the deep country guy that some guys feel more connected to when his wife is dead. Except it's no news at all at this point in the movie and the audience is just like "myeah it's sad, we get it, now let's move on this fucking story!"
