Takeshi Kitano and Takeshi Miike are the best modern directors for this stuff. Miike's earlier work is fucking incredible. Some particular strong recommendations are

dead or alive is the only miike film i've seen, it felt like he wanted to remake violent cop but with his own twists. i wasn't a really big fan of it. the ending made me laugh, but i didn't think it was that great overall. dunno, maybe i'm just a pleb, i really enjoyed kitano's boiling point.

If you dislike random extremity of any kind you should probably steer clear of all of Miike's work. His earlier stuff is generally a bit saner but you'll still have no trouble telling that you're watching a Miike movie. If you want genuine Yakuza you want Battles Without Honor or Humanity.
