1. Because apart from the height difference Hugh Jackman was literally the best person they could have cast for Wolverine
2. People find taller people, and by extension actors, more attractive and they therefore sell more tickets
3. Believe it or not people once weren't so concerned with characters being portrayed by actors who didn't look exactly like them as long as they made an effort.

people forget also jackman originally wasnt going to be wolverine, dougray scott was, had he not have to pull out due to MI3 he would have been wolverine.
