You'll notice in the American Kitchen Nightmares and Hotel Hell, Ramsay hates absolutely anything put before him. I think there's a case of him liking 5 things on the whole series... and even then he hated the meal just liked one thing.

On the British version, he wasn't acting, the US producers it's more scripted, they WANT him to hate everything. Though most of the time he had problems with the food, there were some places he liked quite a bit on the British show.

Most notably, there was a black lady that served him a massive platter of soul food, he cleaned his plate. He had major problems with how the restaurant was ran, but still loved the food.

And cheesy doughy pizza is the shit.... but every time there's a crazy amount of cheese or the dough isn't well done, he complains...

Or another thing, they see this a lot on Kitchen Nightmares and Hotel Hell. The owners have gottens loans to keep the business afloat by putting their homes up for collateral (or their family member's homes). OR they've already lost their homes from their ailing business and either live in their car or stay in the hotel.

Nearly all of those places go belly up. And they should have gone belly up months/years before. The second an owner gambles their home to keep their business alive a few months more, they've fucked up big. And it never rejuvenates a business already in its death throes, just prolongs the agony a few more months.

And it IS a character he plays. If you watched the British Kitchen Nightmare's he's harsh but fair, and he usually doesn't aim to break peoples' souls, just help them improve. This is Ramsay being closer to himself.

After the success of Simon on American Idol. US producers hired Gordon to be the British asshole critic.

And on Hell's Kitchens it's specifically made to be a rapidfire barrage of Ramsay being an asshole.

If you watch Hotel Hell or Kitchen Nightmares (US) it's still far more over the top than his British show, but ultimately his goal is to help people. On Hell's Kitchen, the goal is just to break people for conflict and ratings.
