There can be any number of reasons why he's disillusioned with the Jedi teachings. Maybe it turns out that the Jedi are historically a bunch of warmongerers and he didn't figure out until later. Maybe one or more of his pupils misconstrued his teachings and did something awful with them. Maybe he tried to convert people from the Dark side using the Jedi ways but found that they were inefficient or didn't work. Figuring out why Luke distanced himself from the Jedi is probably the central focus of the entire damn movie
