Can someone explain to me why Jesse reading that Dick got arrested made him realize the Ford brothers were gonna kill him? For what I understand Bob didn't tell the police about Wood's murder so he couldn't have read that on the paper? How does Jesse go from realizing Bob lied about not knowing Dick got arrested to knowing they were gonna assassinate him?

The Ford brothers were sure that Jesse was going to kill them because Jesse trusted no one. So, Jesse killed that guy on the horse and at this point all of his gang are either dead or in jail. so he figures The Ford boyz are in cahoots because that's literally the only associates he has left. Jesse was suicidal and mentally unwell. Bob Ford was scared for his life, he wanted to be jesse, he wanted the fame and reward money, he saw his chance and shot poor Jesse in the back.
