Janissaries were never castrated, that part is all GRRM. They also were only slave soldiers earlier on. Eventually they were changed to just being the second born sons from non Muslim families from around the Ottoman Empire. Being a Janissary was also a pretty good gig since they would be housed and fed by the government. While they were forbidden to marry or have their children inherit any titles they weren't required to be celibate.
