I think in general the Goa'uld were just always better villains than anything that came after. They also had so much untapped potential that it just becomes depressing that they become second rate nobodies that stop existing as a species once the Jaffa rebel en-masse.

You can do so much with the basic premise of the Goa'uld that I'm kind of surprised they never did anything with them aside from slight variations on the same basic villain archetype. They could have explored all kinds of shit, from the melancholy induced by such a long life, to the nature of their relationship with their hosts and subjects, to whatever else you can think of. But instead they were all just mindlessly evil overlords, plucky rebels, and one sort-of fleshed out character. SG-1 was really too simple of a show to make full use of the Goa'uld concept
