The samurai trilogy is definitely a must see.

Also pretty much every Zatoichi movie is good and there's 25+ of those.

Samurai fiction was another good one I saw recently.

Plenty of good recs already, but if you don't mind a different location and age, I'd recommend Ghost Dog.
While not about Japanese Samurais with swords fights, it nails the Bushido philosophy pretty well.
