If you watch the fight carefully, it actually makes perfect sense:
At the beginning, Obi-Wan assumes his normal stance, which is the opening stance for Form III-- the Form that is centered on defending and being able to exploit even the tiniest opening by an opponent -- and the Form that Obi-Wan is the undisputed master of.
But then, he shifts to the opening stance of Form IV: the Form that Qui-Gon specialized in, and which he used all the way up to his fatal duel with Maul in Episode I.
Now, Maul has had experience fighting both Forms. He fought a Form III master in Obi-Wan during the Clone Wars: fights which always ended in draws. But he also fought a Form IV master in Qui-Gon... and defeated him, using an old trick involving his lightsaber hilt.
So when Maul saw Obi-Wan seemingly switch Forms, he was certain that he had it in the bag. A Form III-using Kenobi would've fought him to a stalemate, but an Form IV-using Kenobi would be just as easy as his master was...
Which was precisely what Obi-Wan knew Maul would think. Because even though Obi-Wan shifted his stance, he never actually changed his Form. Maul rushed forward with the same trick that killed Qui-Gon, expecting to a Form IV user, but instead, he ran headfirst into a Form III master-- more specifically, a Form III master who had seen that little trick and had had nearly three decades to devise a counter to it.
And counter it he did.

The sabers in ANH are pretty thin, but every other instance in ESB and RoTJ has them as you know them today.
The only thing they changed about them with every rerelease is their colour. Obi's and Anakin's are almost white in ANH, then Anakin's becomes decidedly blue to oppose Vader's red (or Magenta in the 2004 DVD version because of misapplied colour filters).
