Gonna go ahead and agree with the others when I say: "All of them."
Just watch them all in chronological order. Don't worry, they don't start off bad and take time to get good. Dr. No is great, From Russia With Love is spectacular, possibly my favourite ever, and Goldfinger is the series-defining breakout movie that was so well received it established all the tropes and cliches of the genre. And that's just movies 1, 2, and 3.

You can also watch the original Casino Royale with Barry Nelson if you want to cringe at the sight of an American Bond.
Also watch Never Say Never Again (unofficial movie) if you want to see an old Connery come back for revenge against the producers who were fucking him over financially.
