I'm surrently watching Star Trek Enterprise again after years and years of only watching the series when they debuted. I'd suggest starting with Enterprise, it's not the best series but it's very.. "basic", and "fresh".
Do NOT start with DS9 or Voyager, those are epic level, but far too 'deep' to jump into at first.

Even though I love sci fi, and I know star trek is pretty liberal in it's "hard sci fi" reasoning, and it's often not based in any hard science.... the time travel stuff still bugs me. It's the one area of star trek that I really really wish they don't delve into. The only single time travel story I enjoyed was Enterprises Alternate WWII storyline... and DS9's story line about that black revolutionary fighter, Gabriel Bell, who fought for a poor shanty town in California... that was good.. but all the other time travel stories sucked ass..

I prefer ENT honestly anon, there's a reason trekkies hide in ENT threads.
It has had a lot of more recent support than almost any other piece of Trek in a long time in terms of a swerve in acceptance, liking and generally being added into common nomenclature of trekdom.
The others will have their various tribal intercene conflicts with other groups that are hard formed, usually on a subjective basis that will never be resolved, so go for ENT and enjoy.
I prefer the last two seasons, but check out Broken Bow episodes and the shran episodes from first two seasons at least.
They're the traditional trek seasons, the first two in structure. Third is war oriented and 4th is true prequel season where it attaches to a lot of previous trek ideas.
After you like it and find out you missed out on the Earth-Romulan War in potential fifth season, you will see the loss for what it was as show finally getting its footing.

Firefly is pretty different. It's a bit more quip based - but it does work for it. I like it. Summer is qt too.
Stargate is 10/10 and I will not hear any different. It's classic late 90's scifi, every planet looks like oregon and all the aliens are just people with weird faces till the asgard show up. The characters are compelling, the action is solid and it's a nice universe. The Atlantis spinoff was ok. despite having a bit more of a trek vibe. Universe started shaky but really found it's footing before it was cancelled. Which kinda sucks.
BSG is pretty good, but if you hated the prophets storyline in DS9 maybe avoid it, it gets kinda quasi religious space jesus/emissary as it progresses. It does a great job of portraying a sci-fi military as opposed to star treks more explorative mandate. The space combat is great, the cylons are a solid bad guy. I love the AESTHETICS.
I think it's well worth a watch with the above caveat.

Then, watch the first episode of Next Generation. If you are loving it, watch them all. If not, skip to season 3 and watch the whole series from there.

The early seasons of Battlestar Galactica are pure, unmitigated sci-fi kino. Even people who aren't fans of the show admit that it's really well done - music, direction, CGI and so forth
The problem is that the writer's strike partway through the third season completely tanked the show, and I mean tanked. Some fans completely swear off the show after that point and pretend the rest doesn't exist.

I know it triggers some here but I would recommend someone new to trek to watch tng first and to skip to season 3 after watching ep 1 to get some context on Q.
I asked this in another trek general that died so I'll ask it here.
Why is Worf in ds9, If it was purely for ratings I can understand but he's such a useless character in ds9 and if anything serves to make Jadzia less likeable.
And why does Lwaxana appear several times in ds9. I get that she voiced the computer and was Roddenberrys wife but that character was moderately likeable in exactly 1 Tng episode.
