I'm going to Wacken Open Air again this year, and l'm

Train to Copenhagen / Amsterdam are about 8hrs at most I think with 1/2 transfers
Could go to Berlin/Numemberg either, nuremburg is about 8hours away though also

you could go to Harz Mountains, it's not this far from Hamburg and got lot's of castles

there were plenty of 40+ people there last year, i saw tons of middle aged guys and couples with gray hair. it makes sense they'd be interested with a lot of the bands that go, too.
I'm assuming you're not planning on camping, but just to mention, on the campgrounds I personally didn't see older people so you might be somewhat out of place there.

Wacken to Bamberg would probably take less than 8 hours for 40€
From there go to Nuremberg and Munich and visit Rothenburg and Würzburg on your way back.

Still quite far away desu and you will only see the most basic things.
Amsterdam is nice. Plan a trip to the sea or Antwerp or Utrecht when you get bored
