You're looking for Puzata Khata (Пyзaтa Хaтa). It's basically a buffet of only Ukrainian food and dishes but you pay by the portion/plate or something along that line so that way you can try a little bit of everything. It's a limited buffet or whatever.
I visited Ukraine last summer and my friend took me to this place after I asked him to introduce me to Ukrainian food. I really did enjoy the place. Coming from the west it's quite inexpensive for the amount of food I ate. The borscht and varenyky (dumplings) are very good imo.
The easiest one to find is located behind the main train station, or Kyiv-Pasazhyrskyi. By metro go to Vokzalna. Just exit through the station's southwest entrance and it will be directly across the street. Fun fact: Europe's largest KFC is across the street.
