Blue Mosque, Grand Bazaar, the old royal palace, eating anywhere on the Bosporus, see some of the old palaces on the water, see the old city walls, eat under that famous bridge at wherever, if possible take a boat up the channel... If a shoeshine drops a brush in front of you punt it into the road.

Go to Princes' Islands. Check out Trotskij's old villa.
Check out the bazaar.
Read up on 1000 years of history and go look at all the places.
Go cruise up the Bosphorus. Check out the sights and the groovy villas.
Sit by the water and watch the ships go by. With any luck a Slava or Kirov or Udaloy will pass by.

Somewhere under the city are some fucking spectacular bits of of Eastern Roman water infrastructure. Google kindly informs me one is called the Basilica Cistern, and it's going on my own list of places to visit.
