The stable ones that are reasonably developed, obviously. Ghana in the west. Kenya in the east. Botswana and Namibia in the south.

Tunisia is completely fine, no better time to go actually, apart from a year ago just after the terror attack. Same with Istanbul, you get so much bang for your buck at the minute.
Why all the love for Kenya? Nairobi has massive crime issues as well as the occasional terrorist attack, and the rest of the country is plagued by violent cattle rustling and al-Shabaab. On top of that the locals are extremely racist towards whites. It has well developed travel infrastructure, but it's not a good destination for newbies to Africa.
