I'm looking for a nice holiday next spring. I like vast landscapes, i.e. the north of Canada and also Wandering around the caucasus in Georgia really appealed to me.
Thought about alaska or Russia, but since I'm in Germany alaska is out of my budget atm and I'd actually like to speak Russian before going there since even in Georgia getting around in English wasn't that easy.
Any suggestions?

Scotland is an obvious suggestion.
Less obvious: Corsica/Saridnia, Spanish Pyrenees.
Do you prefer areas with no people?
How is Norway not a no-brainer?

Nova Scotia plus a rent a car is one of the best driving vacations around for beautiful vistas, from gorgeous little coves with lighthouses, and quaint little wooden houses, to gorgeous expanses of rocks, cliffs, beaches down below, and lots of wildlife too. Cape Breton Is is one of the top 10 drives. You can probably get a nice deal to Iceland if you go early enough in Spring, but Ireland is a good 2nd, Scotland a 3rd. Again, you need to be able to rent a car.
Go to the mestia region in Georgia. The mountains are just massive there. There can still be quite alot of snow in the spring though

I was going to suggest the Appalachian trail but if you want sparse do the Continental Divide Trail, you pass through multiple wilderness areas and will be lucky to even see another thru-hiker

seconding cape breton, the cabot trail is beautiful. Interior nova scotia isn't anything special but the coast is pretty. Would also recommend newfoundland for its size and remoteness. Gros Morne is a beautiful park and well worth a visit.
Feeling adventurous? Try something like Kyrgyzstan. Beautiful mountains and nature and not touristy.

I'd recommend Russia, Finland or Norway. Canada is fucking expensive, more so than the US. Especially in the north.

Do the kungleden trail. It's p /out/ it's definitely worth it. If you don't have time then just do the northern part.
Another option which is less physically demanding and damn cheap is the tatra mountains in Slovakia. Rent a log cabin, insta comfy as fuq.

The Caucasus would be my first choice too, but if I were you with that budget, I would choose one of the following:
