I'm traveling through the Balkans for two weeks.
What's essential? What's skippable? How do I avoid getting kidnapped by gypsies?
In most cities gyppos are confined to ghettos and they aren't as dangerous as you'd think. They deal with petty crime (low risk/low reward). They'd rarely try to swindle/rob you outright. Only if you're in their area and you look vulnerable.
Depends on how much time you have, Serbia is entirely skippable in terms of culture, architecture and anything actually to see. Macedonia is also safe to skip.
Other than that, in terms of recommendations:
Croatia first,
Montenegro is a hidden gem
Albania is nice
Bulgaria would be very interesting
Romania as well
Greece def worth a visit
The only thing in Serbia and Macedonia is degeneracy and retardation.

I can only speak from my one 2-week experience in Ohrid, but I found Macedonia to be absolutely stunning both with regard to nature and culture. I'm interested to hear what made you form your particular opinion. Could you elaborate?

Hm, fair enough. Before I go into the thing about Macedonia, was this your first time in Eastern Europe/Balkans as a whole? I can see why Macedonia would appeal to you if it was and you're not familiar with the region and nation's history.
Macedonia is a nothing state created from war and conflict without it's own identity (for a reason). For all intents and purposes what you saw what was microcosm of Bulgaria, as it is the region's cultural and military powerhouse. So all the churches (that weren't demolished or appropriated by the Serbs) and antique houses that you saw were Bulgarian.
With regards to anything else, it's just too small. There isn't much terrain diversity.
Definitely do Albania and Montenegro. I actually enjoyed my time in Serbia, great food and friendly people.
Also, don't forget about Bosnia. Sarajevo and Mostar are both worth a visit.
