I've only seen one good use of this and it wasn't even from a fanfic.

I remember that one; it did get a second chapter where Judy met up with them at a bar. She tried to get into the conversation, but Jack and Nick talked in basically code, using references Judy didn't understand. She noticed how Nick seemed really happy, something she hadn't seen since they first became partners. Once Jack left, and they went back home, Judy tried to get Nick up for some fun time but Nick had passed out the moment he hit the bed. Judy was left sitting on the bed, wondering "what was I thinking?"

This was updated back in July, so it is definitely dead.

Not particularly original, but this was a nice little story of Nick meeting Judy's family. He is wonderfully in character (not really lazy but likes playing around), has equal amounts of mature and immature moments, some teasing WildeHopps, and a page or two that made me honestly tear up.

I don't know enough about this to refute you, but I will say that most documented case probably would be as the non abusive ones are probably kept hush hush.

Not entirely true. It's because of some nasty recessive genes being activated that causes that happening. It happens with normal hetero couples too if they both have that specific gene, then all that would happen to their children. But not everyone has those genes and you can actually be screened for it now. So, Incest couples and normal couples could see if its viable to have healthy children and if not, they will know not to have children to spare their offspring and themselves the suffering.

To be fair, before Jack Savage gained popularity authors usually used some random OC bunny they came up with to act as a romantic plot device against WildeHopps. The main thing that changed was that everyone was basically given a cookie cutter character with a fix "cool" design and a better rival history for Nick; after all, who better for Judy to be with than a better version of herself, instead of just some 'boring' OC civilian rabbit the author would have otherwise come up with?

It has slowly gotten better over time, Jack used as an actual character, as a villain, used as a slapstick character, genderbent into "Jill Savage" who either has a thing for Nick or is batshit insane (generally both).

While there might be something to that, it still doesn't take away the fact that having very different characters interact in any way, not just relationship wise, is more interesting overall, so adding species into the mix is always going to result in this. This is the basis of Zootopia; Judy, this small little bunny, interacting with usually much larger mammals that overlook her. With someone like Nick, he isn't so big that, other than claws and fangs, he doesn't intimidate her much (ignoring her history with foxes). With her boss, Bogo, he towers over her, giving off authority even without his position, and thinks this tiny mammal can't do the job like the rest of the mega fauna ZPD.

If I wanted to draw characters of the same species in a relationship I'd go back to drawing humans or make a world where only one sapient species exists.

Not to say same species couples CAN'T be interesting, of course. That's not what I mean to imply. It's just more entertaining to have that variety there, and a lot of people like to explore the dynamics of both species.

I can get what you mean by it ruining part of the charm, but it doesn't change the fact that it's more fun to produce, at least for me.
