The closest thing I can think about that comes to that entire "Scent Bonding" deal would be "A Bunny CAN/Could go Savage"

Where instead of Nick getting hit with NightHowler during the Muesum finale it was Judy, and through close contact with Nick during that, she ended up developing a scent bound with him. But far more dangerous and rare then what Zoot had seen before..

In that if she wasn't able to smell his scent constantly she would pretty much go into shock and have a life-taking heart attack.
Pretty drama-filled but solid writing. And how terribly morbid that idea and possibility, had me quite pleased with how much the author kept showing how much their life's changed with that addition.

And it also started with a Judy that was open with her love/attraction towards Nick, while Nick didn't feel that much for her. (At the start)

Oh, yeah. The thing is that even if the situations are similar, the character portrayals are different. Vernon Hunter's Bellwether has been tamed and softened. She's basically the good-hearted sheep from the actual movie's first half, played straight. And their relationship honestly is a lot like a traditional sort of Stu and Bonnie Hopps style pleasant romance.

I honestly imagine they were ridden normally.
They would not be normally used as slaves or anything but they woud pull more weight (literally) if they were on all fours. They would be paired with the rider like buddies of sorts, they would have miltiary training together with trust exercises and so on.
The power of cavalry would be just too much to turn down just so that the horse can feel appreciated.

The horses would get the same share of glory and respect as the rider.

They would be in armor and all, with the covering cloth that could be build to appear as normal clothes when they would rise up.

But I still imagine they would get reins for the battle. It would just be more convenient way to change directions and strategy mid battle. Instead of yelling your lungs out with simple directions.

I enjoyed Booze & Biology too; it was a sweet emotional piece. I liked the idea of the "Good Stuff", not really a quid pro quo but an agreement between them that they need to talk, with the alcohol helping to ease tensions. Judy is fully in character, rushing head first into what she thinks is a problem. Nick still has that bit of self-consciousness, especially when it comes to Judy. And it would be like Nick to do a bit of research before hand, and for Judy to check for solutions...but from the wrong sources.

I imagine zebras, donkeys and other equines would be used for this purpose aswell. Mammals could get paired by size so that horse is not wasted on small mammals and donkey does not have a lion sitting on top of him.

I just imagine the horses would be best for it seeing how they are built for it.
Riding a feline like a tiger would give you speed but you would be low, and that is a big deal of cavalry, the movable highground and power of charge, that would be hard to get from feline or canine. But you would also lose a natural warrior who an use all weaponry and can well fit on a horse.

And bigger animals like bears and bulls, rhinos (who have fingers) would be a really heavy infantry. With thick armor , a lot of spikes and sharp eges so that they can charge and do damage by just moving, when would they be mortally wounded they could try to fall into enemy hordes or rolling themself down the hill to cause even more damage.
