a maker has to make enough of a profit to cover overhead prices, such as electricity, machine maintenance, cost of materials, labor AND still come out ahead, when adding it up, they're not making that much of a profit

if you're the only one with that pattern that looks that good compared to others, meh versions of the same character, you're gonna be chosen over the inferior design
some people don't mind a slightly lesser quality product, but when you get into 500USD and up, you're really looking for great quality for your buck
you might have to wait a few months before the maker opens, but you use that time to save up for the plush you want, that way you're not trying to scrape up a payment before they start on yours and most of the time, they want a percentage down rght away and of it's an OC, they'll usually want it all upfront because no one else would want it if you back out on them at the last minute

Well, I did start a lot of smaller stuff and projects but they just didn't grab on and were left somewhere in the middle. This one was one of the very few I've actually finished. I can't compare with some top craftmakers yet but that's just part of the process. Plus I did her mostly out of stuff I bought cheaply so not so much resources wasted.

Let's do some math. Math is fun and it's 4 AM which means it's even more fun. Agatrix makes plushes really fucking fast and she takes ~5 days to make one. My plush from her was 330 USD. Assuming she works eight hours a day (honestly she probably works more) that means before the cost of materials and equipment even gets factored in she's only getting paid 8.25 USD/hr. That's nothing for the level of skilled labor needed. That's 17k USD a year.

Your view of cost is probably distorted by the almost literally slave labor plushes that come out of China. If you want the artists to be able to eat, you're going to have to drop the expectation of cheap plushes.
