Here's the reason. Birds are harder to draw than most other animals.

Their bodies are more unusually shaped and they're covered in poofy feathers which makes them hard to figure out and that's purely from an anatomical sense.

As a result most artist just draw a human with colored skin and a beak. Some of them even make the birds shine which is annoying.

Feathers are also really tedious draw, even in most of the images you selected, the artist cheated so they didn't have to draw that many feathers or any feathers at all.

It takes really good artist to be able to do these things. As a result there is a higher learning curve.

Now this is different for people who make more cartoony pictures. Which I also like but rarely are they my favorites. It's a bit easier for people to make those.
