Think of it like this. You come across a high level boss that is more powerful than you. BUT, its health has been reduced by 50%, meaning you might beat it if you nuke it down. We don't know how much Aura Cinder lost fighting Ozpin. Then again, Auras are strange. The characters have enough or too little, depending on what scene asks for.
By killing Pyrrha, Cinder altered her own destiny, which is to be killed by Ruby and her friends. Had Cinder not killed Pyrrha, then Ruby and the others would not have received the same motivation to pursue Cinder and put an end to her.

Her plan relied on a famous fairy tale being true and she got punked by a completely different fairy tale that apparently never occurred to her. Doesn't seem very smart.
So heres a thought.
What if the Grimm don't actually feed on negative emotion and instead, it causes them horrible pain which makes them to try and kill the sources of it to make the pain stop. Their appearance and actions caused the misunderstanding that they are just bloodthirsty savage creatures that should be purged. Salem knows that humans will never be able to keep that emotion in check so she just wants to purge all the humans/faunus to stop it all together.

The fucked up thing about how stupid Pyrrha was to fight Cinder at that time was there was no real necessity to it. Killing her hours later is as good as killing her in that moment, and Pyrrha did fucking kick her ass pretty good half the time.
There were two options that were better; Pyrrha and Ozpin together might have been able to do it, or Pyrrha and all of the teachers together might have been able to do it. Maiden powers are not invincible.

Honestly, I think that's just how all Hunters are. Just look at the finale. every member of Team RWBY managed to find a way to charge in against life-threatening danger that probably would've killed them, Ruby even managed to do it twice in one night. Ruby got lucky against Roman and Neo, Blake and Yang only escaped because they had a friend saving their ass, Weiss' Semblance saved the day just when it needed to, and Ruby's magical destiny as SILVER EYES save her from getting cremated and managed to be somewhat of a spanner in the works for Cinder. But Pyrrha wasn't main character enough to have these things, she had no plot armour. She didn't get lucky, her friends were too late to save her, her opponent was made to counter her Semblance, and the magical destiny she thought she had was all wrong.

That's my favourite thing about Pyrrha's death. I was probably one of the most vocal people going on about how Pyrrha was going to die at least as far back as the first hiatus. But when she actually walked out of the basement alive I thought "Huh, guess I was wrong. Looks like she's not gonna die after all". That place was a deathtrap, if ever there was a place for her to die it was down there. And she just got to walk out, right past the big bad, completely unscathed, after being told not to get involved and to get someone more competent to help instead.
