Amusingly, Elder Scrolls is one of the games that makes playing humans fun. They're not generic "jack of all trades" with vaguely American accents and mannerisms.
Nords are vikings with healing magic (and who should have their own pantheon dammit), Bretons are stupidly individualistic and glory seeking spellcasters with feuding nation-states, Redguards are heirs to immense power and wisdom, and are masters of the sword, while Imperials can be sly, noble, strong or wise but all with a spark of the Septim within.
They've all got their own thing going on, y'know?

I would agree TES makes the humans a bit different. all of them have their own thing going on which makes them interesting rather than the usual boring human.

That said mechanically they could use a bit of spicing up.
Skyrim and Oblivion didn't really seem to know what to do with Redguards in particular. Bonus stamina is just shit. It's not interesting, engaging or fun. It's not even very useful.
Just give them a daily AoE spirit sword swipe or something. Free supercharged bound blade daily power. Anything other than stamina regeneration.
