You could (get the available equivalent(https://www.digilegs.com/buy-digilegs)) but that alone's ~$900, most people spend around that much for commissioning the entire outfit. There's a few DIY options floating about that do just as well. (When I tried, it was a failure 'cause I didn't have the necessary access to power tools.) There's also this for the lazy and/or people stuck in my position: (Search Digi Stilt on etsy, fucking spam filter.)
It's not as much raw height as the Weta / Digilegs, but even with that (My failed attempt was of similar size) it gives fairly impressive results after it's covered and integrated into the rest of the costume.

the eyes are typically made out of some perforated material so you can see through them when extremely close up to them the coloring on the eyes also makes it easier to see out rather than in, even if you got super close to a suiter you would have a hard time seeing the person's head through the eyes
as for the sweat thing it's about as bad as you think - sweat protective clothing like runner's gear and vests that hold ice packs worn inside the suit help prevent sweat building up and keep it away from the suit itself so it doesnt get all smelly

suits still need to be looked after use though whether that's through washing or letting them air out and disinfecting them

So, in order of questions-

Vision: depends on the material. Most people use a mesh. The eye part is normally painted with acrylic paints, and then the back is painted black to help the vision. I'm not sure how. Vision range depends on the size of the eyes, suit style and type of animal. The average blindspot is deadset in the middle about an adult's hand width.
The most common way to see out of one is by favoritism of an eye as a view port. This is why you sometimes see suiters tilt their head towards a person in a way to focus on the speaker.

Ventilation: the average suiter wears what is called a balaclava. This is a mask made out of a fabric to wick sweat away from the foam or resin. More suits now and days tend to have built in balaclavas or are just lined with the sweat wicking fabric. Fancier suits have fans built into the head to keep constant air flow.
In a fullsuit body, a lot of wearers use under armor or really any lycra style fabric. More is less in this case, and you're more likely to dirty your suit with sweat if you don't wear anything under it. Even just a shirt and shorts isn't a great idea. Some companies also sell cooling vests, or you can make your own.

You're more likely to sweat more in a tight fitting suit with the fabric being pushed against everything. The sweat has no where to escape besides into the fabric and moving around is gonna suck. 1- The main gear under it. Underarmor heatgear. Had to get the junior girls sizes for both body pieces because it was the only one that came in pink anymore. Funny enough, the shirt is still too big on me.
The balaclava I got on eBay. You're supposed to have your face showing but I didn't wear it normally for reasons.

2- The body padding. Rarely is fursuit padding one piece. I paid extra for this. I know the crotch looks weird but that's because the stomach area isn't currently full. I can actually stuff it, but since polyfill hardens over time I try not to keep the padding stuffed all the time.

3- Tada, I am now a pink candy monster. I bought sprays to make her smell like sugar but I washed her after Anthrocon so she just kinda smells like linen and clean clothes

If you get underarmor, get the heatgear one. I know that seems weird but it'll make sense when you look at it.

Drink lots of water (next year I'm gonna bring a camelbak) and take a stop at the headless room if you need to.
