Do metal joints make the figure less liable to break than regular plastic joints?

No, it just means the joints themselves won't break. Metal is stronger than plastic so it could actually make the plastic parts it interacts with easier to break.

Metal is obviously stronger so you can use it to hinge small parts like in OP's pic. How easy it is to break depends on how much plastic is surrounding it.

Metal joints like in OP make it easier to tighten the joint, plastic joints cannot be adjusted (as far as I'm aware) without a layer of something added (like floor shine or whatever it is that people here use)
