The manga doesn't pretend to be some deep psychological examination. It's just a series that plays around with fantasy tropes and takes things like the classic elf tsundere and reimagines it with her being tsundere towards the main theme of the manga. It's a rinse and repeat tsundere cycle with no attempts to pretend otherwise.

Keep in mind that this hesitant and suspicious elf is also the girl who's dedicated to learning the deepest secrets of dungeons and had established in her backstory that she was more adventurous towards learning about potentially disturbing things within dungeons than other people. She has no problem with killing, harvested and processed monsters in the past, and doesn't hesitate to do things that are not simply potentially dangerous but very likely deadly.

But, because it's cute for her to be tsundere towards eating monsters, she's tsundere towards eating monsters. Every time. Like she's an amnesiac or somehow enjoys being proven wrong time and time again.

The classic tsundere cycle is being abrasive and aggressive on the whole, then, upon a certain trigger, being docile and nice for a while. Marcille doesn't go through this at all. She's generally not aggressive or abrasive toward anyone, she just consistently finds the idea of dungeon food unappealing, even if it tastes good.

You'll notice that Marcille lacks boundaries in the area she's obsessed with - magic. She's a diligent student of the magical arts who has done a great deal of research into the subject, and who has pursued a ton of different theories to their logical conclusions. Magic - even the 'ancient magic' people call blood magic or dark magic - is something she knows intimately, and feels she has a rock solid understanding of.

Monsters are not this. Monsters are just gross, hostile beings that hang out in dungeons to her. Not that this parallels Laios. He is a fount of knowledge regarding monsters - they're his obsession and he knows absolutely everything about them, and he's far more willing to experiment in weird ways with them. Laois knows how monsters work, which parts are safe to eat and which aren't, whereas Marcille only really has his word to go on regarding this, and it should be pretty fucking familiar to you as a normal human that studious types tend to be reserved and doubtful about this sort of thing, preferring to confirm things themselves rather than rely on second-hand information. In this way people that we'd consider scholarly can often be pretty stayed and set in their ways in regards to other stuff.

For someone who likes to go on about bad others are at analyzing characters, you're pretty shit at it.

Marcille is a dungeon expert in her own right, and has experimented with monster parts in the past and is also never shy from volunteering what information she has from her own studies, including how to harvest some monsters. And, she is definitely far from being a typical scholar unafraid to experiment or to stick to conventional means or methods.

More importantly, her "specific hang up" has already been explained. She's tsundere towards food because it's a dungeon food manga and its 80% of her charm. You strip her of that, and she'd just sort of stand around, eat the food, say it's good, and not get into any conflict with any of the characters until halfway through the manga instead of the first chapter.

That's also one of the few non-food "Use of Monster Parts" that was central to a chapter. If you need "food" to be expanded to "whatever quirky use of a monster is the focus of the chapter", then consider the statement amended.
