I doubt they will justify it like this, but if you wanted it to work you could explain it away. Say that some of the better scientists and military minds escaped away with the plans to space Argentina. Starkiller is bigger because they've had a full generation to size up the weapon. The groundbreaking work was finished with the first Deathstar.

As for resources, the Empire was in it for the long haul. They only collapsed because of a freak strike that took out their leadership all at once. The First Order is fighting with their backs against the wall. Everything they have is going into kicking ass and expanding.

Yeah the piloting thing is kind of a plot hole. Luke actually owned a ship, and IIRC it's implied in Episode 4 that the T-16 has very similar controls to an X-Wing because they're both made by the same company and conform to some standard.

In fact, Luke never flies a ship that isn't made by Incom Corporation. The T-16, the X-Wing, and the Hoth Airspeeder are all made by the same company with (presumably) the same or similar control schemes. Him being capable at piloting those ships ties his skill to something concrete in the universe.

Power creeps like this always disappointed me. Its also a horrible idea for a franchise and I figured Disney would have a lot more forward thinking than this.

In the original trilogy it was fine having enemy ships and weapons get bigger because it was meant to be leading to the grand finale.

On its own power creeping is fine, but for a franchise it just makes things awkward for writers in the future to try and create a sense of danger for characters that have already faced greater foes and worse odds and come out alive so they next episode or series needs to have an even bigger finale.

Unless they change this formula in the next episode I fear they'll get stuck in exactly what you described with a Star Killer based flanked by a fleet of death stars that give supporting fire.

Yeah the early decision making process behind the scenes was pretty awful. Personally I would like to see an Imperial Remnant in the next film, I'm fairly certain Disney didn't erase the idea. The Resistance being lead by Leia also butchers her character imo, she was a supporter of the Republic but instead of working as a Republic official/leader she chooses to be a Warlord/General. Engines have to be bigger.
Every doubling of size requires quadrupling of thrust.

Then you have the additional fuel requirements, since it has been established SW ships still ise some form of fuel.

Eventually any size you add is taken up by engines and then engine size over takes the available space.

I've always assumed their shields could be set to allow slow-moving or otherwise low-energy objects through (or set to block everything), depending on what you were planning on using them for.

Want to keep people out of someplace or protect a ship? Blocks everything. Protect some infantry? Only blocks weapons fire.

Plus they seem to be able to make them not affect things passing through from inside, so ships can shoot out if that's what the shields are designed for.
