Dark souls 1 had some wonky stats but mostly it worked.
Darks souls 2-3 have a bunch of stats that may or may not do anything.

Correct. There was also Comeliness, which tracked your character's physical attractiveness.

Thieves are actually relatively new, and caused a lot of problems early on. Priests/clerics were introduced to counter a player's broken ass custom vampire PC well before any kind of skillmonkey.

You're right they weren't there at the very beginning but...D&D was released in 1974 and the thief was introduced in 1975, so "relatively new" might be stretching it.
