I'm doing a jekyll and hyde type character in pathfinder, rolling my class as an alchemist. What's the best creature to transform into a hulk like guy with the spell list I have available? Probably a monstrous humanoid through Monstrous physique.

Just be a skinwalker if the GM allows it and use the vivisectionist archetype. Grab a barbarian level or two along the way and just find a way for your character to get pounce. You lose bombs with vivisectionist though, so be content with being a punchy-guy. The skinwalker gives you a natural weapon based on whichever you pick and you just rood out with extracts before the fight starts, then just charge people with mutagen and rip them in half.

Check out the Master Chymist PrC, it's jekyll and hyde the class. Also you'll probably have better luck getting answers out of /pfg/ (>>55030838).

Did you literally not read the class? The alchemist can already turn into a hyde with the "mutagen" ability.
