Have interesting feedback effects when they fail.

Have a central governing mechanic behind how they work.

Commodify them in-world: have readily available substances that amplify or annul psionic potential.

For my own personal taste I like the idea of psionics as doing things with the physical body as well as the mind.

You can touch someone and take control of their nervous system by useurping their bio-electric energy with your own allowing you to do things from reading various vital signs about them to literally just commanding organs to shutdown.

Maybe you were one of the people who was born without the natural limitors on your muscles so with proper training you can truely achieve super-human feats of strength.

Perhaps you have a halo of energy above your head because your brain partially exists as energy but because of this you have the capacity to remember everything you've ever experienced from physical sensations to memories as if you were living them again but it takes you time to sift through the vaults of your mind

perhaps you have multiple joints where you would not normally have them allowing you to bend and twist your arms and legs in ways that they would not normally.

Have psionicists more prone to self-modification

Their power comes not from without but from within, so it's likely they would try to change themselves to open new avenues of discovery or increase their power. This could be as simple as tattoos, piercings, or chemical ingestion. Or it may involve self mutilation, surgery, or flesh grafts. Esoterically they may even try to integrate the mind/soul of others into their own.

Psionics have to sacrifice something to get something else. So to gain the ability to reach out with your mind to push something, you have to use your psychic energy to permanently sever your arm. Sure, it has more versatility, range, and power, but it also drains you of energy an order of magnitude faster than an ordinary arm.
